Non-Vintage Eocene Blanc de Blancs Cuvée #1

This is a blend of three different vintages, all chardonnay from Robinson vineyard in the north Willamette valley. We always hand pick and sort our clusters, gently press, and bucket to neutral French oak barrels. Aged two years on tirage, we disgorged in March of 2023, and added 4g/l dosage. We felt the dosage complimented the rich style of this blanc de blancs without presenting sweet. Blending the vintages gives you a layered effect of flavors and aromas. The older barrels will have developed more oxidative notes like nutty, toasted, yellow apple aromas, and the younger vintages will lend freshness like lemon zest, green apple, and tart pineapple. You really get the full spectrum in this wine. Refreshing acidity, beautiful bakery, lemon tart, chamomile nose.
