2021 Eocene Willamette Valley Chardonnay

Three different vineyards and pick dates across the Willamette valley lend to a variety of flavors and aromas. We hand pick, hand sort and foot tread our chardonnay whole cluster. Allowing the berries to macerate for hours to days to bump up aromatics and texture. No new oak and great acid on this wine lends to a sense of freshness and zest. The barrel fermentation and aging adds a necessary softness and roundness to the palate. Lovely aromas of lemon tart, stone fruit and green apple.
