2021 Eocene Pinot Noir

Our 2021 pinot noir was hand-picked and sorted. We destemmed and fermented warm to coax out color and aromatics. Gentle pump overs were performed for the first ⅓ of fermentation and then twice daily punch downs until the wine was dry. The fermentation was very aromatic, and ever changing. At times it was very herbal, and others, almost as meaty and rich as syrah. Big aromas with pretty herbal tones like bay leaf and black tea along with an earthy component like crushed gravel and graphite, and strong red ripe cherry. Light ruby in color with medium grip from tannins and juicy acid. This wine has aging potential. It would pair nicely with chanterelle mushrooms and an herby chevre on toast.
