2021 Eocene Blanc de Noirs

This blanc de noirs is 100% pinot noir, clone 114, from robinson vineyard in the north willamette valley. We hand picked, hand sorted and destemmed the fruit and immediately pressed to a variable capacity tank. We cold settled for two days and racked to a neutral french oak barrel prior to inoculating with a standard sparkling yeast. The fermentation was smooth and steady for about nine days. Very bright and clean, white peaches, toasted rice, lemon tart. Great refreshing acid, zesty and lively. Lovely small bubbles.
